Smoked Paprika, Olive and Tomato Cornbread Muffins



These moist little muffins are great for a picnic, light lunch or a main meal served with refried beans, guacamole and vegan sour cream! Nom Nom! They can easily be made gluten free by replacing the wheat flour with a good gluten free flour. These muffins don't rise too much, so don't be alarmed! Make sure you fill them pretty much up to the top of the muffin case. They are super quick to make and keep well in an air tight tub for 3 days.


Ingredients: To make 12 small or 8 large muffins

1 cup of polenta (corn)
2 cups of flour
1 tsp of Baking Powder
1/2 tsp of Smoked Paprika
1/2 tsp of Cayenne Pepper
1/2 tsp of sugar
Pinch of Salt
Pinch of Black Pepper
1/4 of a cup of Nutritional Yeast Flakes
1/2 Large Mild Green Chilli (Chopped up into small dice)
1/3 cup of Black Olives (Chopped into rings)
1/3 cup of Sundried Tomatoes (Chopped into small strips)
1/3 cup of Olive Oil
3/4 cup of Soya Milk


In a bowl mix the polenta, flour and baking powder into a bowl. Add the Smoked Paprika, Cayenne pepper, sugar, salt, black pepper and nutritional yeast flakes.


Than add the chopped mild green chilli, black olives and the sundried tomatoes.

Finally add the wet ingredients, the soya milk and olive oil. And mix into a thick batter. It will get a bit thicker as the polenta swells up. If it gets really thick and dry add a touch more soya milk.



Line a muffin tin with muffin cases and spoon tsps of the mix into 12 small muffin cases or 8 regular muffin cases. As I said before these muffins don't rise too much, so don't be alarmed! Make sure you fill them pretty much up to the top of the muffin case. Sprinkle each muffin with a pinch of smoked paprika.


Bake in a hot oven (190c) for 15 mins or until golden brown. A good way to check if they are ready is to insert a skewer into the middle of one; if it comes out clean then they are done! Serve on their own with vegan butter or with refried beans, guacamole and vegan sour cream. Enjoy!

New this week!



We have some exciting news that we are starting a little Norwich 'get together' vegan group! I have thought about starting one for a while and then put it off as I thought maybe it wasn't a good idea, but I had a couple of emails (thanks Erika and Stephie!) asking if I knew of a vegan group or whether I ran one! So the first meeting will be at the Forum at 7.30pm on the 8th of May! We can discuss recipe problems, vegan niggles and hopefully make some good friends! Whether you are in transition, dabbling or a full timer come along and help others on their way to a more sustainable way of life! If you would like to bring some cake or nibbles (vegan of course) to share that would be great (I may bring a cake ;) ) In the future maybe we could share ethical books and watch screenings of films?(China Study, Forks Over Knives, Vegucated) So come along! I would be great to meet you!

It seems I can't make the Rose and Pistachio quick enough at the moment with it selling out within a day or two! But I can confirm another was delivered to Biddy's Tea Room today so grab a slice while you can! Also I delivered fresh batches of the Classic Green Tea and Pistachio Whoopie pies and Cinnamon Whirls to The St Benedicts Food Store this morning!    

Also a quick reminder that I will be having a two day pop up shop on the 27th and 28th of April at the Forum 9am - 5pm with all your favourite Deerly Beloved Treats!

Easter Weekend Fun Part 2!



















We had a great Easter Sunday despite the rain! We had to run about and find our eggs and treats pretty quickly as it started to pour and my little 2 year old nephew was getting soaked bless him! My sister made me the most delicious handpiped Viennese biscuits! And my mum made us all hand knitted chicks! My little niece made kyle and I a gorgeous little basket full of chicks, hand painted eggs and chocolate buttons! We were really spoilt! We also had an amazing vegan roast made by my mum and a gluten free vegan dessert of fruit muffins and poach pears which was gorgeous! We went to bed full last night! I hope you all had an amazing Easter!

Just to let you know my Pistachio and Rosewater Sponge Cake will be back at Biddy's Tea Room tomorrow after the Easter weekend break! And Cinnamon Whirls and Raspberry, Hibiscus and Chocolate Whoopie Pies will be back in Toms St Benedicts Food Store tomorrow as well! X

Easter Weekend Fun Part 1!














Hope you are having a great Easter! Today is the annual Easter egg hunt at my mum and step dads house! The whole family gather in the garden to find some bought and some hand made gifts that we have hidden for each other. See last years Easter hunt here! We then sit down for a huge meal, then stuff ourselves with chocolate and finally play board games or if the weather is nice, rounders or stuck in the mud with my niece and nephew!

Thyme and Roasted Pepper Ravioli with Tomato Sauce


This is such a great dish. It takes a bit of time, is a bit more fiddly than just opening up a packet, but holey moley, once made, you can say you have made pasta! No ravioli, from scratch! And that's pretty darn cool!

Ingredients:
To make the basic pasta dough:
1 2/3 Cup of All purpose flour
1/2 Cup of water
1/3 Cup of olive oil
1/2 Tsp of sea salt

The Ravioli Filling:
1 Red and 1 yellow pepper chopped into quarters
3 cloves of garlic in their papery skin
3 Tbsp of olive oil
A sprig of Thyme
Pinch of salt

Tomato Sauce:
A can of chopped tomatoes
1 Tbsp of olive oil
1/2 Tsp of sugar
1 Tsp of balsamic vinegar
Pinch of salt

Other things needed:
A ramekin of water and a pastry brush
A pasta machine is useful but I will be explaining how to make the ravioli with out one!

In a bowl add the water, oil and salt together and give it a little whisk! Slowly incorporate the flour and bring together into a dough that is moist enough to 'clean the sides' so no scraps of flour are left. If you find the mix is too dry add a little more water, if to wet add a little more flour.(All flour batches are different according to the age of the flour, the weather and the brand! So a little more flour or water may be needed!) Cover with a cloth and pop in the fridge.

In a roasting dish pop in the pepper quarters and garlic. Keep the garlic whole and in it's skin as it will protect it from burning and allow it to steam sweetly in it's little protective jacket! Then drizzle over the oil and the pinch of salt. And pop in a hot oven a 190c for 30mins until soft and burnished.
Take out of the oven and scoop out the pepper flesh into a bowl. With a fork apply pressure to one end of the roasted garlic and the garlic will pop out all steamed, sweet and delicious! Add to the peppers. Pluck the leaves from the sprig of thyme and add to the bowl of peppers too. With a fork gently mash it all together, we don't want a puree here, just small enough so that the pieces will fit happily into the ravioli.
Now the next part can be made easily with a pasta machine, however if you don't have one, flour your side board lightly with flour and roll out the dough thinly, but don't make it see through or holey! Using a small glass or ramekin cut out circles of dough for your ravioli. Take a circle pop in a tsp or so of the pepper mixture, then wet the out side of the circle with the ramekin of water using the pastry brush. Lay another circle directly on top. Now gently push down sealing around the mixture a bit at a time as to push any air out of the ravioli. If there is air trapped in the ravioli it may make it split when it cooks, and we don't want to lose our lovely filling in the cooking water!
Once all the ravioli are made, pop them in the fridge to firm up. While this is happening make your tomato sauce! In a frying pan add the tomatoes, oil, sugar, balsamic and pinch of salt. Then let this reduce by half and intensify in flavour. Bring a pan of salted water to the boil and pop the ravioli in a few at a time, do not over crowd the pan. The great thing about these ravioli is that when you pop them into the water they sink to the bottom, when they are cooked they will float to the top! When this happens catch them with a slotted spoon, shake gently to remove any water and pop on a plate. Spoon over your tomato sauce and serve immediately! You can make the ravioli in advance, they will happily keep in the fridge a day or two in an air tight container.
