New this week!

This weeks gorgeous cake available at Biddy's Tea Room is the Deerly Beloved Bakery Caramel Pecan Cake! A fluffy pecan nut sponge sandwiched with vanilla caramel butter cream and drizzled with homemade caramel and pecans! It is so hard not to eat it myself! Also at Biddy's are the Deerly Beloved Bakery Lemon and Lavender whoopie pies! Fragrant with a lemony cheesecake flavour cream! Delicious!




Cinnamon Whirls will be at the St Benedicts Food Store with the lovely Tom who also sells this amazing ice cream from Bessant and Drury's. It is made with coconut cream and is pretty damn yummy!

Deerly Beloved engagement!

It's not news of a cake variety, but me and my boy got engaged on Tuesday! We are very excited and happy about this new chapter in our relationship and lives! And I think I may have to get planning on the best vegan cake there ever was! XXX

A week of meals.


I thought I would do a post on what Kyle and I have for tea for a week. So I decided to take a photo of what we ate each night! I do try my best to cook a meal for us each day, even if we have had a hectic busy one, so we spend that time together eating and talking about our day. Of course there are days where I do beans on toast, or pop a veggie sausage in the oven for a sausage and mustard sandwich or if I have been really busy in the kitchen Kyle makes his famous beans and rice dish! And some nights Kyle does an evening shift at work, so then I usually rustle up a salad just for me. I also like to prove to disapproving  non-vegans that I don't just eat 'carrot sticks and hummus'! Pea, leek and parsley risotto and blueberries and apple slices.

Home made ravioli stuffed with roast pepper and thyme with  tomato sauce.

Home made tomato and thyme scones, seitan burgers cucumber and tomatoes and oranges.

Spinach, cucumber, olives, sundried toms, chives, and omega seeds with avocado mayo and marinated raw mushrooms.

Home alone salad of avocado, spinach, cashews, olives, and seedy bagel and tomato juice.

Homemade pizza with olives, cashew cheese and water cress, mango, blueberry and papaya salad.

Tempeh, kale and pepper coconut curry and blood oranges

Wedding bakes and what's new this week!

So this week I had to make cakes for the lovely Holly and John for their wedding day! It was a peacock feather theme, so I cut out by hand individual ovals and hand painted them with the 'eye' of a peacock feather to be popped on top of 41 mini whoopie pies and some GF cherry brownies! We delivered them on Saturday morning to the Puppet Theatre, where the wedding was being held,  and where I found Holly happy and buzzing with excitement! Knowing that my cakes will be a part of their special day is a wonderful feeling!
Here is some pictures of them being made and being boxed up and ready to go!




Hopefully I will have some pictures to show you of the cakes arranged at the wedding! Can't wait to see them!

New this week is a wonderful Lemon and Pine nut cake which will be available at Biddy's Tea Room tomorrow! It is two layers of rich lemon and pine nut drizzle cake sandwiched with a lemon buttercream and sprinkled with more pine nuts! It is wonderful, it tastes like a promise that summer will arrive again soon!


I have also made the ever popular Olive Oil, Sea Salt and Chocolate Whoopie Pies, which are also available at Biddy's Tea Room tomorrow! Made with 72% chocolate ganache, they taste like a buttered brioche with melted dark chocolate on top! This is one of my favourite cakes that I make!



And finally the Deerly Beloved Bakery Cinnamon Whirls will be in the St Benedicts Food Store tomorrow! Make sure you say hello to the lovely Tom who now also sells dairy free ice cream and a range of great vegan store cupboard essentials as well as locally grown vegetables!



And now here are a few pictures I snapped while baking today including my wonderful Christmas present my boyfriend gave me, which is a gorgeous stag necklace which I have named Storm. The little fork and spoon necklace that I wear a lot of the time is from a trip to Manchester last summer. I only got a fork and a spoon because I am a peaceful cook and believe that all vegan food can be eaten without a knife.

Valentine's chocolate box!

 
I have been busy making the finished Valentine's gluten free and of course vegan chocolate box!It has changed slightly because I found some heart moulds (you can never have enough hearts!) and hibiscus flowers (so delicious!) on my ingredient hunt in the city today! So the finished box now contains 2 white chocolate rose flavour solid chocolate hearts dipped in 72% choc and sprinkled with tiny hearts, 2 brownie chocolates and 2 raspberry and hibiscus flower truffles! Laura Manfre!

Vegan French Macarons!

Well it's been long in the making and to be honest I have been rather scared to try and have a go at them as they are thought of as a hard treat to make with the proper egg ingredients let alone vegan! But today I had a go at making vegan macarons! And I think they worked out pretty well! They are not perfect and I will be working on them to get the final recipe just right (and slightly more chewy!) And to be honest I have very rough notes on the quantities of each ingredient I put in them as I made it up as I went along! But I am pretty proud that my first ever batch actually got 'legs', cooked, were very light and had a meringue like texture! And they are gluten free like the originals too!
