A week of meals.


I thought I would do a post on what Kyle and I have for tea for a week. So I decided to take a photo of what we ate each night! I do try my best to cook a meal for us each day, even if we have had a hectic busy one, so we spend that time together eating and talking about our day. Of course there are days where I do beans on toast, or pop a veggie sausage in the oven for a sausage and mustard sandwich or if I have been really busy in the kitchen Kyle makes his famous beans and rice dish! And some nights Kyle does an evening shift at work, so then I usually rustle up a salad just for me. I also like to prove to disapproving  non-vegans that I don't just eat 'carrot sticks and hummus'! What did you have for dinner this week? Do you have any dinner time rituals? Do you think it's important to eat at the table or not? I would love to hear from you!
                                 
                                                 Monday
Pea, leek and parsley risotto and blueberries and apple slices.
                                                   Tuesday

Home made ravioli stuffed with roast pepper and thyme with  tomato sauce.
                                                     Wednesday

Home made tomato and thyme scones, seitan burgers cucumber and tomatoes and oranges.
                                                    Thursday

Spinach, cucumber, olives, sundried toms, chives, and omega seeds with avocado mayo and marinated raw mushrooms.
                                                   Friday
Home alone salad of avocado, spinach, cashews, olives, and seedy bagel and tomato juice.
                                                   Saturday


Homemade pizza with olives, cashew cheese and water cress, mango, blueberry and papaya salad.
                                                   Sunday

Tempeh, kale and pepper coconut curry and blood oranges
                                                   Sunday breakfast!

Pancakes with blueberries!

  1. Wow! Your meals are amazing! The raviolis and the "Spinach, cucumber, olives, sundried toms, chives, and omega seeds with avocado mayo and marinated raw mushrooms" looks so so yummy!

  3. Ooh, all looks great. I try to make a shopping list once a week then I've got all the stuff in to make real meals, otherwise I have a tendency to lapse into eating lots of sandwiches! I've never made ravioli, did you use a specific recipe?

  4. I make a basic pasta dough using:
    1 2/3 cup all purpose flour
    about 2/3 cup of water
    1/2 to 3/4 tsp salt
    3 tbsp of olive oil
    I then fill it with any filling I fancy! Try it out and send me a pic X
