The Deerly Beloved Certosino Christmas cake is an Italian cake filled with pine nuts, chopped dark chocolate, whole almonds, fennel, cardamon, cinnamon, unsulphered glace cherries, candied peel, apples, rasins and a little tipple! All bejewelled with nuts, glace fruits and apricot glaze, wrapped in brown paper with a bow.     Oh wow, those mince pies just reminded me of spending Christmas with my granny as a kid when I lived in England! I used to love mince pies. The cake looks wonderful too.
